After the success of Usagi, Master Sommelier Christopher Ramelb and I traveled to Napa Valley to sit down with winemaker Tadeo Borchardt and taste through individual barrels of Cabernet Sauvignon and Merlot. Our goal was simple: create a wine worthy of the Dragon, a symbol of strength, power, and prosperity.
The final blend is 70% Cabernet Sauvignon and 30% Merlot from the outstanding 2024 vintage. We selected the barrels that showed the most depth, structure, and character, resulting in a wine that is powerful yet balanced.
As Tadeo puts it, "The Draco blend is unique to you. The wine has 15% new Austrian oak from Stockinger, one of my favorite barrels because it respects the fruit and vineyard rather than imparting a huge impact on the wine. One component comes from a 600-liter demi-muid with thicker staves, allowing for slower maturation."
The result is Draco. A wine built with intention, layered with dark fruit, structure, and elegance. Bold enough to carry its name, but balanced enough to reflect the vineyard and vintage that made it possible.
